Iridescent gold with a luminous core. Strikingly fresh aromas of spring meadows, heather and hay, a tantalising lift of bergamot coalesce into darker tones of ginger, honeyed tea and roasted nuts. Concentrated yet weightless the palate is a study in complexity with a duality of fresh and dried fruit: apples, pears, pineapple flash through toasty hazelnuts, marzipan and hints of truffle. A calling card of the 2012 vintage, the rapier-like cut of acidity is reminiscent of crunchy, green apples, refreshing the palate. The pillowy mousse washes in and recedes in accordance, like waves breaking on the shore, a kinetic dance between fruit and structure. The finish is long and layered, and resoundingly fresh, an incredible achievement for a 2012 vintage Cap Classique. This wine is not for cellaring; the interplay between maturity and freshness is best enjoyed soon after disgorgement.
