Delicate notes of blossom, honeycomb, gingerbread and glacé pineapple run through layers of pear, yellow apples, and white sultanas balanced with a wash of lime. Aged on the lees for 18 months, deeper layers of crème anglaise and buttery brioche emerge topped with a creamy, luxurious mousse and a touch of sweetness from the winemaker’s reserve dosage.
